Two Easy and Delicious Chocolate Cookie Recipes!

I love baking. This is not a new statement of mine. If you’re in my family, or a friend of mine, I’m sure you’ve tried at least one piece of my baking.

I often mention that I very rarely follow recipes. In fact…I can’t even remember the last time I followed a recipe for a cookie.

Here are a couple of cookie recipes that I made up recently where I actually remembered to write the recipes down. Both of these cookies are egg and dairy free.

Double Chocolate Crunchy Cookies

You will need:

  • 1/3 Cup Softened Coconut Oil (not melted)
  • 1/2 Cup Coconut Sugar
  • 2 Tbsp Hot Water
  • 1/2 Tbsp Vanilla Essence
  • 1/2 Tbsp Molasses
  • 1/4 cup of Carob Powder *
  • 1/4 Cup Cocoa Powder
  • 1 Tbsp Cornflour/Tapioca
  • 1/3 Cup Oats (instant or whole)
  • 2/3 Cup Plain Flour
  • 1/4 tsp Baking Soda
  • 200g/1 Cup Dairy-free chocolate of your choice chopped up (doesn’t have to be dairy-free if not vegan) …I really like a mix of white and plain chocolate 🙂

*If you don’t have Carob powder, just replace it with Cocoa Powder.

OK! Put your oven onto 180 degrees C.

Put your oil and sugar into a bowl and mix. Then add your vanilla, hot water and molasses and mix it in. Then add the carob, cocoa and cornflour. Mix mix mix.

Then add the flour, baking soda and oats. When it’s looking all chocolaty and good, add the chopped up chocolate.

Make the cookies into around a heaping tablespoon size and squash onto a baking sheet.

Put into the oven and bake for around 9 and a half minutes.

Take out and leave to cool for a tad, then EAT 🙂

Oil-free Dark Chocolate Cookies

What you will need:

  • 2 Tbsp Peanut Butter
  • 1/2 Tbsp Molasses
  • 1 Tbsp Tapioca Starch/Cornflour+ 3 tbsp water
  • 1/4 Cup Coconut Sugar
  • 1/2 tsp Vanilla Essence
  • 1/4 Cup Cocoa Powder
  • 1/4 Cup Instant Oats
  • 1/2 tsp Baking Soda
  • 1/3 Cup Plain Flour
  • around a 1/2 cup of dark Chocolate (I use Whittakers 72%)
  • Sultanas (optional)

Pop the oven onto 180 degrees C.

In a bowl, mix the Peanut Butter, Coconut Sugar, Molasses, the Water + Tapioca, Vanilla and Cocoa. Mix Mix Mix until Smooth. WP_20151113_008WP_20151113_009

Then add the the oats, the baking soda and the flour. Mix Mix! Finally, add the dark Chocolate and/or sultanas.

Bake for around 7 minutes, or until they’re smelling rather fragrant in the oven. Let them rest for a while, then EAT 🙂

I hope you enjoy these! I really do.. They’re becoming a bit of a staple in our household. Oh well. What a shame 😛
